This dish is very tasty so easy to cook, you will not need fresh chicken breast, bread crumbs, egg wash and so on, so in other words forget the cook books and try Pappi Bill’s recipe. This is nice for families or a little quiet dinner for 2 with a glass of wine and some garlic bread and you help one another in the kitchen even if you just keep the wine topped up and just think of the money you will save in not going out to a restaurant.
So here we go ingredients = Spaghetti, 1 tin of chopped tomatoes, 1 jar of pasta sauce the one you like, 1 packet of mozzarella cheese, also some parmesan cheese and the secret weapon 1 packet of garlic butter chicken Kiev’s….yes I know and it must be the garlic butter filling. Now the seasoning…a sprinkle of garlic powder, some Italian seasoning it’s in a jar in the super market spice rack and salt and black pepper.
Start by making the sauce empty the tin of tomatoes into the pan then the jar of tomato sauce simmer while adding the garlic powder, Italian seasoning, salt and black pepper with a touch of red wine. Let this simmer slowly to thicken up, taste, if you need to add a little something get the tomato ketchup out just a squeeze will do stir in and taste if you think it needs more just add a little at a time because it makes a big difference in the taste. When the sauce is nearly ready put the chicken Kiev’s in the oven at around about 180 for 25 minutes. You will know when they are ready because the garlic butter will start to seep out of the chicken breast. Now put the water on to boil sprinkle with salt and a little oil, now some say no oil and some say yes to oil so that’s down to you. The next step you cover the chicken Kiev’s with the tomato sauce cut the mozzarella into slices and place over the chicken and sprinkle some parmesan cheese. Then back into the over just enough to melt the cheese. Serve the pasta onto warm plates then place the chicken along side the pasta, spoon extra sauce over the pasta and sprinkle extra parmesan over the sauce you are now ready to enjoy so top up the wine glasses plate up the garlic bread.
