I call this dish ‘left over vegetable soup’


I thought of this soup after seeing the poor excuses of some of the school meals that have been delivered to households this week. When you look into the veggie draw in your refrigerator and you see some of them starting to go over don’t turn your nose up at them and throw them out make a pot of soup. It’s this easy as example:

take 1 medium onion, 3 or 4 potatoes, 2 or 3 carrots and a couple of handfuls of frozen peas. [ if you only have a tin of peas that will do ]

Now this amount will make you approximately a gallon of soup “yes that’s right 1 gallon” All you will need to season the soup is a couple of stock cubes, vegetable or chicken and 1 bouquet garni [not the fresh type just a cube] as I said it’s everyday easy cooking to keep your costs down.

Here we go = Put a small drizzle of oil in the bottom of the pot then cut your onion into small pieces and on a low heat just soften the onion making sure not to burn. Then throw in your peas stirring as you go next cut your carrots again into small pieces and the same with your potatoes, everything goes into the pot. Season with salt and black pepper and crumble stock cubes in stir everything in and fill with water making sure you cover all the veg and stir. Pop on the lid turn the heat up and let it all boil up. When it’s boiling turn the heat down to a fast simmer and ease the lid, every 5 to 10 minutes give it a stir. All this will take less than 1 hour and you will end up with about 6 good dishes of soup.

When it’s ready just mash it all up, this way you will hide the veggies from the kids as this could be part of their 5 a day and as an extra turn if you like just drop in a handful of grated cheese. I call this one cheese drop soup. So there you go 2 of the best soups you will ever taste. All from something hanging around the bottom of the fridge.

Now don’t panic if you don’t have a big pot just use the biggest you have and reduce the veg accordingly.
