Leek and Potato Soup.

As with the first soup another delicious home made soup at very little cost.

First, you need 2 medium leeks…top and tail both leeks removing most of the green end then slice down through the centre of both leeks lengthways and then cut into small slices. With your pot splash a couple of spoonsful of oil into the pot then place the cut leeks in and gentle stir ensuring they don’t stick while you peel the potatoes and chop into small pieces. When the leeks have softened drop the potatoes in and stir. At this point put a cup of water into the pot and stir , sprinkle in salt and pepper plus couple of stock cubes for taste, fill with water to just above the veg and stir. Put onto the heat bring to the boil and then turn down the heat to a fast simmer stirring every 5 to 10 minutes until the veg has softened. If you have a hand blender blend your soup if not use a potato masher and season to taste. There you have it, a delicious soup all for the price of 2 leeks and a couple of spuds.

As time goes by you will see I don’t cut up parsley to drop over the top to make it look good or drizzle some cream around because the way we will cook is the inexpensive way but if you do have a dinner party then you can do the posh bit’s.
